Have you tried Mole?
Mole, is one of the most famous dishes in Mexican cuisine.
Its origin dates back to pre-Hispanic cultures where the indigenous people mixed various chili peppers with pumpkin seeds, holy grass and tomato to create a sauce they called mulli.
This was normally accompanied with turkey, although duck and armadillo meat was sometimes served in ceremonies as an offering to the gods.
With the arrival of the Spanish in Mexico, new products appeared, and they were added to the mole recipes. Ingredients such as black pepper, cacao, anise and cinnamon and in the case of meat, chicken, beef and pork were integrated. During colonial times, thanks to the gastronomic fusion between pre-Hispanic and European cultures, there was a wide range of ingredients for cooking, resulting in a great variety of moles.
From pre-Hispanic times to the present, the mole is a symbol of Mexican culture and a wonderous gastronomic offering to the world.
